Honey Chipotle Gluten-Free Cheerios Snack Mix

Just before one of my last trips out to Disneyland in California I got a text message from my girlfriend Heather.

“Hey…if I send you some money can you buy me some of those gluten-free chips they sell in the Walt Disney World theme parks and bring them out to me in California?” I was flying from Florida to California and she was coming in from Arizona to meet me there.

When you have a condition where you have to eat gluten-free, snacking and traveling can be a bit of a challenge. That’s why when I found out that Cheerios ™ was about to come out with a gluten-free line and a special “Buy a Box. Give a Free Box” offer, Heather was the first one that I thought of. She was also the inspiration for this recipe.

Here’s how it works.

The 411 on Gluten-Free Cheerios ™

Gluten Free Frosted Cheerios

As someone who doesn’t have to eat gluten-free I have to say that I couldn’t tell a difference in the the gluten-free Frosted Cheerios ™. They tasted just like the non gluten-free version to me.

There’s a lot of science behind it all but in a nut shell…Cheerios ™ are made with whole grain oats. Whole grain oats are naturally gluten free but the farms and plants that handle them usually introduce a small amount of wheat, barley and rye into the mix.That trace amount of wheat, barley and rye is what keeps Cheerios ™ from being labeled gluten-free.

But, by the power of the cereal gods over at General Mills, they’ve come up with a super secret stealthy way to remove all traces of wheat, barley and rye making their product truly gluten-free.

Now…on to this sweet and spicy travel mix!

I was able to source all of these ingredients at my local Walmart.

In a large mixing bowl we are going to combine gluten-free Frosted Cheerios ™, gluten-free shoestring potatoes and gluten-free maduro sweet plantain chips.

In a second microwave safe bowl, microwave three tablespoons of salted butter for about 25 seconds. When your butter has completely melted, add two tablespoons of honey and a half teaspoon of chipotle chili powder. Whisking everything to combine

Pour your honey chipotle mixture over your cereal mixture and stir until everything is evenly coated.

Place your cereal mixture into the microwave and microwave on high for two minutes. After two minutes take your mix out and stir. Place the mix back in the microwave and microwave for another two minutes. Take the mix out of the oven and stir. Turn the mixture out onto a piece of wax paper and spread out to cool.

While your mixture is cooling, pop a mini bag of gluten-free kettle corn in the microwave and cook to the specified directions on the box.

When your mix has completely cooled, pour the bag of gluten-free kettle corn into a large serving bowl. Add your gluten-free Frosted Cheerios ™ mixture to it and toss to combine everything.

  • 3 Cups Gluten-Free Frosted Cheerios™
  • 2 Cups Gluten-Free Maduro Sweet Plantain Chips
  • 1 Small (1.75 oz) Container Gluten-Free Shoestring Potatoes
  • 1 Mini Bag (1.2 oz) Gluten-Free Kettle Corn
  • ½ tsp Powdered Chipotle Chili Pepper
  • 3 tbs Salted Butter
  • 2 tbs honey
Instructions
  1. In a large mixing bowl, combine gluten-free Frosted Cheerios ™, gluten-free shoestring potatoes and gluten-free maduro sweet plantain chips.

Step 1

First you are going to locate the “Buy a Box. Gift a Free Box” sticker on your cereal packaging. Peel that off and look inside for your special code.

Next you are going to visit www.walmart.com/cheerios. Click on the blue button that says “Enter Code Here”

On the next screen you are going to fill in your special  box code and a few other fields.

Then you will type a special email message to your recipient.
