Healthy Fall Apple Chicken Salad Recipe

As previously mentioned here, (How to Sabotage Your Diet and Weight Loss Goals in 8 Easy Steps) I’m back on the diet bandwagon.

This means that I am really trying to eat clean and avoid alcohol, sugar and carbohydrates and concentrating on eating lean protein and veggies. Lean protein means I’m eating a lot of chicken. Chicken is a pretty versatile meat and can be fixed in a myriad of different ways. This Fall Apple Chicken Salad is one of my favorites. It’s made with high-in-protein, non-fat Greek yogurt which really boosts it’s protein power making you feel fuller longer. Which is always a good thing when you are trying to avoid overeating.

I cook this for one. It ends up making a serving for lunch and a serving for dinner. Would be great over a green salad or as a sandwich if you aren’t watching your carbs.


1 boneless chicken breast
1 single serve non-fat Greek yogurt cup
1 tbs mayo
1 celery rib
1 apple
1/4 cup slivered almonds
1/2 cup golden raisins
1/4 tsp white pepper
1/4 tsp garlic salt
1/4 tsp onion powder
1/4 tsp turmeric
1/4 tsp curry powder
salt and pepper

Preheat oven to 400. Split chicken breast with a knife and place in baking dish. Liberally season both sides with salt and pepper. Bake for 35 minutes or until chicken is no longer pink inside and juices run clear. Do not try and take the easy route when cooking your chicken and boil it. The flavor will not be the same as a baked chicken breast. Trust me on this one.

Once the chicken has cooked and is cool enough to handle dice or shred the chicken into bite sized pieces and place in mixing bowl. Finely dice one entire rib of celery and add to bowl. Finely chop your apple and add it to the bowl. Mix in almonds and golden raisins. Add the entire cup of Greek yogurt and the tablespoon of mayonnaise and then top that mixture with the white pepper, garlic salt, turmeric and curry powder. Mix the powdered ingredients in with the mayo and yogurt and then slowly incorporate it into the rest of the salad ingredients making sure everything is combined evenly.
