Creamy Garden Seafood Pizza with Crescent Roll Crust

Two more days until 2015! Say it isn’t so. Where did I park my DeLorean? I’m not ready for 2015. Why? Because I’m turning 40!!! That’s four zero. Four decades. Almost half way to the finish line! I’m trying not to dwel on the number but I got a grey eyebrow hair the other day people! A grey eyebrow… Da FUDGE!

Yesterday I posted another recipe that utilized store bought crescent roll dough: Buttery Croissant Broccoli Ham and Cheese Braid Recipe. Because The Cowboy brought me a few extra tubes of crescent rolls, I decided to share this Seafood Pizza recipe from my Pampered Chef cookbook. It starts with rolling your tube of dough out onto a baking stone like so and cooking it off in the oven until golden brown.

This Seafood Pizza recipe is so easy! Just chiffonade some fresh spinach. Zest a lemon and chop up some black olives, scallions and imitation crab meat.

This would be a fab New Years Eve party appetizer! Seafood always seems a little bit decadent and New Years Eve is one such night where decadence is expected.

The “sauce” for this pizza is cream cheese with a little spinach, lemon juice, lemon zest, dill and scallions mixed in. You slather that mixture all over the cooled crescent roll dough crust and then top with the remaining ingredients.

And you don’t have to worry about seafood allergies with this recipe because you’re not using real crab meat. Did you know that imitation crab meat is made out of fish? True story.

I love that you can make this recipe ahead of your party and then just store it in the fridge until you’re ready to serve it. It also travels well as it is best served at room temperature.

Creamy Garden Seafood Pizza with Crescent Roll Crust Recipe

Ingredients
  • 8 oz refrigerated crescent rolls
  • 8 oz softened cream cheese
  • 1½ cups spinach leaves (stemmed and chiffonade)
  • 1 scallion
  • 1 tsp dill weed
  • ⅛ tsp ground pepper
  • 2 tsp lemon zest
  • ½ of a lemon, juiced
  • 4 oz imitation crab meat
  • ¼ cup chopped black olives
Instructions
  1. Preheat oven to 350.
  2. Unroll crescent dough and place onto your baking stone making a rectangular shape.
  3. Roll or pinch seams of dough to seal edges.
  4. Bake 15 minutes or until golden brown.
  5. Remove from oven and cool completely.
  6. Chop spinach, scallion, black olives and imitation crab meat and zest lemon with a microplane.
  7. In a mixing bowl combine cream cheese, half the spinach, half the scallions, half the lemon zest, pepper, dill weed and the juice of half a lemon. Mix well.
  8. Spread the cream cheese mixture evenly onto cooled crust leaving a half inch border all the way around your pizza.
  9. Top pizza with imitation crab, black olives, and remaining scallions, spinach and lemon zest.
  10. Slice and serve.
